the easiest fried cauliflower rice
because i need all of the easy meals i can possibly find right now, this is one of my absolute favorites. it’s been in my back pocket forever, and is so easy to whip up in under twenty minutes.
ingredients:
2 cups frozen riced cauliflower
1 zucchini
3 garlic cloves, minced
1 tbsp sesame oil (plus extra to finish)
tamari (or soy sauce) to taste
2 eggs
diced green onions, for garnish

heat sesame oil over medium high to high heat in a pan. add frozen cauliflower to pan. cook for 5 minutes without touching, letting the water cook out. add diced zucchini, garlic, and salt and continue to watch as the vegetables begin to brown. add scrambled eggs and let cook with the cauliflower and continue to brown. add tamari when vegetables are done, and stir well. plate, and garnish with green onions, spicy salt, and a drizzle of sesame oil.
