best sriracha salmon and cauli rice

forever one of my all time favorite foods is salmon. anyone i work with will tell you that it’s my immediate choice if wade has to be out to work (he’s not the biggest salmon guy).

last week, he had to be out, so i jumped on the chance to make one of my favorites, thank you gwyneth paltrow. i made my favorite, salmon with sriracha and lime, with kale zucchini cauliflower rice, had some sancerre, and was on cloud nine.

salmon with lee’s sriracha + lime (adapted from it’s all good)
zest of 1/2 lime
juice of 1/2 lime
1.5 tsp sriracha
1 tbsp maple syrup
coarse sea salt (love jennifer fisher’s spicy salt)
2 salmon fillets (5 oz. a piece)
chopped green onions to garnish

preheat oven to 425 degrees. whisk together the lime zest and juice, sriracha, maple syrup and salt. place salmon slice on a parchment paper lined baking sheet, and pour mixture over it. roast until salmon is done to your liking, about 15 minutes. serve with cauli fried rice and chopped green onions.
