sriracha lime salmon tacos

tacos are my favorite food, for honestly any meal of the day. this version, sriracha lime salmon tacos have been one of the easiest for me to whip up, especially weeknights before the kids bedtime.

salmon with sriracha and lime (adapted from gwyneth paltrow’s, it’s all good)
zest of half a lime
1 1/2 tablespoons freshly squeezed lime juice
1 1/2 teaspoons of sriracha
1 tablespoon maple syrup
jennifer fisher spicy salt
2 salmon fillets (6 oz. each)

preheat oven to 425 degrees. whisk together the lime zest and juice, sriracha, and maple syrup. line a baking sheet with parchment paper and place salmon on top. season salmon fillets with spicy salt and then pour most of the mixture over the top, reserving a small amount.. roast until the salmon is just flakey, about 15 minutes.

for tacos, i use two shells per taco fillet.

taco assembly:

char or heat taco shells to your liking. flake the cooked salmon and spread evenly between taco shells. top with any reserved sriracha lime mixture. garnish with sliced green onions, radishes, microgreens, pickeled hot peppers, and serve.
