breakfast tacos
so here’s the deal, i love food, specifically tacos, in every way, shape, and form. to the point that we chose to get married in mexico so that i could eat tacos for a week straight.
that said, one of the highlights of my weekend are always these tacos. i love for breakfast, and making breakfast on the weekends. its a ritual; i blast music, scramble eggs, chop toppings and sip my coffee. it’s the best.
anyways, onto the important part of this - my favorite recipe, that i play around with a bit, but the basics are this.
taco basics:
2-3 soft scrambled eggs
jennifer fisher universal salt
fresh cracked black pepper
siete cassava and chia tortillas
toppings:
radish
green onion
bacon
avocado
siete hot sauce
instructions:
heat olive oil or butter of medium heat in a frying pan. while heating, scramble 2-3 eggs and season with jf salt and freshly cracked pepper. once the pan is ready, pour eggs into pan and cook until softly scrambled (or done to your liking).
while eggs are cooking, slightly char tortillas over gas or heat in a pan. take off heat and save to assemble tacos.
chop toppings that you wish to include. i love having my green onions cut on the bias, and chopping my radishes as matchsticks.
once eggs are done, assemble tacos: eggs, bacon, avocado, radishes and green onions. top with hot sauce to your liking.
